Anyone who’s anyone has looked up to the hill of Manly and admired the grandeur that is The International College of Management, Sydney, or ICMS for short. My memories have always reflected elegance, exclusivity and prestige. I had always heard that their students and service was the finest the peninsula had to offer and also that the college catered for local Chamber of Commerce functions but I never knew that this experience was also available for the public.
After parking the car, my dining companion and I walked through the grounds admiring the heritage architecture and formal landscaping. Tall ceilings, full length windows and antique furniture are as expected as we walk down the hallway to the main dining room.
We are greeted by the friendly staff as we enter the dining room and courteously seated at a window table. It was not til the manager introduced himself that we were aware that our waiter was indeed a student in training.

We were then promptly delivered the menu and offered drinks. The menu’s vary every 3 weeks. This is also in sync with the turnover of training students who spend 3 weeks with face-to-face experience with first class customer service. The ICMS has been offering lunch and dinner dining to the public for 4 years running and is definitely the place for a value 5 star meal.
As the lunch menu offers two choices for entrée, main and dessert, we opted for one of each. How could we resist 3 courses for $30.00! We were then promptly served bread rolls which was quickly followed by our entrees.
A sweet potato and coconut soup was smooth and creamy with a hint of spice. The alternative entrée was a rocket and beetroot salad with Roquefort dressing. Everything was as it should have been with just the right amount of dressing and a sprinkling of pinenuts to compliment the salad.
In between our entrée and main course, the Manager came over for a chat to ensure that our lunch had been enjoyable thus far. He also explained how the restaurant operated and the success of their students. Being a training dining room, it is important that the students are able to hone their professional skills in a realistic environment.
Our main courses arrived and we weren’t disappointed. The barramundi was cooked perfectly and served with a potato and carrot mash potato with steamed zuchinni and the chicken breast was served with bok choy and an asian spiced sauce.
Once again as with the service staff, the food is prepared and presented by the students trained at the ICMS. The manager is more than willing to offer a tour of the facility including the kitchen so that guests can understand how the college works and the standard in which the students are trained.
There is a healthy selection of wines available both by the bottle and the glass. There is no BYO but with excellent prices for so many great wines, why would you bother?
Dessert was promptly served and coffee offered. The Coconut Panna Cotta, a set cream, with a dreamily perfect consistency was accompanied by a passionfruit sauce. The other dessert option was a classic Chocolate Mousse served in a sundae glass with fresh strawberries and cream. The chocolate mousse was velvety smooth and just the right size to compliment a three course lunch.
All in all, The International College of Management, Sydney is one of the peninsula’s best kept dining experiences.
