Easy No-Bake CheesecakeCheesecake main



Enjoy the delicious lightness of cheesecake minus the baking time!

Ingredients:

Base
2 cups Granita biscuits, crushed
90 g butter
2 teaspoons hot water

Filling
1 tablespoon gelatin
¼ cup hot water
250 g cream cheese, softened
1 teaspoon vanilla essence
Rind and juice of half a lemon
1 x 310 g tin mandarins
2 egg whites
½ cup caster sugar

Method:

Step 1- Combine biscuit crumbs for the base with hot water and butter.
Step 2 - Press base mixture into pie plate or spring form pan.
Step 3 - Dissolve gelatine in hot water for the filing.
Step 4 - Beat softened cream cheese for the filling until smooth.
Step 5 - Gradually add sugar, gelatine, vanilla essence and lemon rind.
Step 6 - Make lemon juice up to half cup with juice from the mandarins.
Step 7 - Add liquid to cream cheese mixture and blend well.
Step 8 - Beat egg whites until stiff and fold into cheese. Add mandarins.
Step 9 - Pour into crumb-crust and chill until firm.

Serves: 6-8
