Mojito Recipe
Sugar Lounge Manly Beach bartender extraordinaire Kieran Bailey's take on the Cuban classic.
Kieran Bailey’s “Our Manly Mojito”
“A pain to make and a delight to drink.”
This refreshing cocktail is the stuff of legends and has been enjoyed by cultural icons from Ernest Hemmingway to Bond, James Bond. The drink was first popularised during the days of the U.S. prohibition when the rich and famous had to journey to the party capital of the Caribbean, Havana, Cuba to get a decent drink.
An all time favourite of any well respected drinking establishment and a drink which can vary in serving glass, type of sugar, methodology and the use of crushed ice or cubed!

3 spoons raw sugar
3 lime wedges
12 mint leaves

Refresh with crushed ice to present well and add a mint sprig to finish and aromatise the drink.
Tips:
- Inner Circle Red is premium rum made from molasses; it has the perfect balance when combining with the flavours of the Manly Mojito.
- Crushed ice is a necessity in a lot of new and classic cocktails. Click here to find where to purchase bar equipment including a simple ice crusher and muddler.
